The menus that follow are just a sampling of wonderful foods and ideas SHAZAN CATERING can offer you and your clients. YOU DO NOT HAVE TO FOLLOW THEM IMPLICITLY. We will design a customized menu for your party that will surprise your guests and leave you breathless!
Oh, by the way, we are never offended when you request a substitution. On the contrary, we encourage it!
Hors d'oeuvres
Shrimp cocktail- Tiger shrimp cooked to perfection and chilled on ice, decoratively arranged with lemon wedges and our own homemade cocktail sauce.
Crostini toppers- Freshly toasted baguette slices topped with Vegetable caponata-roasted eggplant, vegetables, herbs and spices blended together or Bruschetta: roma tomatoes and fresh picked basil with just a hint of olive oil and garlic... (PLEASE ask for other suggestions)
Ceviche- Petite shrimp, delectably marinated in a spiced citrus-herb and vegetable mixture, served with corn tortilla chips and fresh lime.
Chips and salsa(s)- Organic com tortilla chips accompanied with your choice of salsa's: Black bean and corn salsa-A blend of roasted corn, black beans, red onions, cilantro, jalapenos and lime juice. Salsa fresca- Chopped tomatoes, red onions, cilantro, jalapenos, lemon juice and assorted herbs. Salsa Verde- The same as "fresca", but tomatillos are used for this one.
Warm crab dip- Crab, cheeses and fresh herbs blended together and baked to a golden crust. Served with sliced baguettes or crackers... "usually goes first"
Hot artichoke dip- A blend of artichoke hearts, spinach, cheeses and fresh herbs mixed together and baked to a golden brown. Served with baguettes or assorted crackers.
Stuffed mushrooms- Large mushroom caps stuffed with your choice of: A blend of vegetables cheeses and herbs. All are freshly blended, baked and served hot!
Baked brie- A wheel of French cream Brie decoratively wrapped in puff pastry and baked to a golden brown outside with a warm flowing center. Served with baguettes or assorted crackers. Also available with poached pears and walnuts or caramelized onions and garlic (other fillings available)
Smoked salmon wrapped asparagus -Slices of smoked salmon (lox) with a schmere of our secret spread wrapped around asparagus spears (seasonal/market price)
Focaccia- Topped with your choice of fresh herbs, spreads, vegetables or cheeses. Fresh baked and prepared for you.
Baked Napa loaf-Large baked Napa round topped with a butter, fresh herb and Parmesan spread, baked to a lightly crisp crust. Served with sweet roasted garlic (to spread), and a balsamic-olive oil blend for dipping.
Stuffed portabello mushroom- A blend of cheeses, roasted garlic, sundried tomatoes, bread crumbs and fresh herbs baked and topped with parmesan cheese. (+Mkt. price)
Antipasto platter- An array of fresh roasted vegetables, marinated mushrooms, artichoke hearts, olives, roasted garlic and mozzarella medallions served with herbed toasts (also available with assorted Italian meats)
Five spice pork loin- Marinated overnight and then perfectly roasted and thinly sliced. Served hot or chilled with sweet and spicy cabbage.
Shrimp skewers- Scampi style with garlic and lemon butter or with jalapeno, lime and cilantro.
Assorted phyllo cups- Filled with your choice of a warm spinach, feta, bacon and chive mixture or chilled hacked chicken salad with Thai peanut dressing. (other fillings available)
Curried chicken filled endive or romaine- Tender endive leaves or romaine cup this mixture of diced chicken, raisins, cilantro and lime with a lightly spiced yellow curry and coconut dressing. (endive seasonal) (+Mkt. price)
Smoked salmon spirals- Thin slices of salmon wrapped around a blend of herbs, scallions and other delicious flavors, sliced and placed on English cucumber (very refreshing).
Treasure purses- Thin dough wrappers filled with seasoned potatoes, sour cream and caviar neatly tied with a scallion tie. (other fillings available)
Tortellini skewars- Quattro formaggio filled tortellini marinated in fresh basil, tomatoes and other herbs and spices.
Polenta with roasted vegetable chutney- Polenta molded, sliced and topped with a delicious roasted vegetable chutney.
It's a wing thing...NEVER fried!-B.B.Q,'ed-marinated in barbecue sauce- HOT!wings marinated in HOT wing sauce- Oriental wings-soy/ginger marinated- Teriyaki marinated- New Orleans (HOT! HOT!) Cajun spice rubbed- Southem "fried" baby drumsticks- ALL are baked.
Mixed gourmet sausages- To choose from: Chicken apple, Turkey-sundried tomato and herb, Smoked chicken and mango, HOT! links, Chicken artichoke and red pepper, sweet or HOT-Italian.
Sate'- (Thai peanut skewers) Skewers of chicken, beef or vegetables (your choice) marinated in a lightly (or heavy) spiced peanut and coconut mixture. Baked and served with a Thai dipping sauce.
Meatballs-These "pop in your mouth" all beef meatballs are simmered in one of our specially blended sauces: b.b.q., Swedish, sweet and sour/Hot and sweet and sour cream -dill.
Sliced Fruit Platter-Seasonal fruits, artfully displayed just for you. (+Mkt. price)
Pinwheel Sandwiches- Lavosh soft bread rolled with fresh vegetables and an assortment of meats and cheeses.
Assorted vegetable platter- Seasonal vegetables, tossed with herbs, spices and virgin olive oil, then roasted. (Zan's favorite) (+Mkt. price)
Slow roasted hickory smoked B-B-Q ribs- It'll fall right off the bone...and messy too! Plenty of extra sauce for dipping.
Hummus with pita- Ground chickpeas with spices, garlic, lemon and sesame paste blended together. Add in with an additional cost: Roasted garlic, red peppers, olives, artichokes...etc. (just ask us).
Our secret recipe crab cakes- Crab blended with all of our delicious secret ingredients, Shhh...baked to a golden brown and Served with dipping sauces.
Skewers-Your choice of: ltalian marinated antipasto, chicken, beef or vegetable fajita(marinated in our blend of fajita spices) * Also available:-B.B.Q-Cajun-Teriyaki-Sweet and sour skewers.
Fruit and cheese- An artful display of seasonal fresh fruits accompanied by imported and domes tic cheeses with assorted crackers.
Seven layer dip- Vegetarian re-fried beans, sour cream blended with Mexican spices, fresh guacamole, salsa fresca, shredded lettuce, blended cheeses and black olives served with corn tortilla chips.
Lunch/Dinner Menu

Chicken Florentine- Hand stuffed with spinach, herbs and a blend of cheeses. Topped with a sherry-mushroom sauce, served with wild rice pilaf. (other stuffings and sauces available)
Garlic rubbed beef- Beef loin rubbed with a blend of garlic and seasonings, cooked and sliced to perfection. Served with roasted garlic mashed potatoes.
Shrimp Scampi- Jumbo shrimp perfectly cooked in a white wine-garlic-lemon butter, tossed with linguini.
Salmon Wellington- Fresh Salmon Filet wrapped in puff pastry and topped with a mixed berry demi glace. Served with roasted garlic and herb mashed potatoes.
Chicken and/or vegetable Fajitas- Chicken breasts and julienne vegetables are sautéed with authentic seasonings, onions and peppers. Served with warm flour tortillas, rice, chips and salsa fresca, guacamole and sour cream. (also available with beef)
Meat and/or vegetable Lasagna- Beef and ltalian sausage with seasonal vegetables, cooked with rich ltalian seasonings, layered with ricotta, mozzarella and parmesan cheeses and of course, our homemade sauce!
Prime rib- Herb crusted and slow roasted to perfection and sliced to your desired thickness. King cut- every piece with a bone (BIG approx. 1-11/2 in. thick), Queen cut- every other piece with a bone (Medium-approx. 1/2 -3/4 in. thick), Bone out and sliced (1/4-1/2 in. thick). Accompanied by mixed salad with a sweet basil-balsamic vinaigrette, seasonal vegetables and your choice of starch (roasted potatoes or garlic mashed or seasoned mashed or wild rice pilaf) and dinner rolls with butter. King/Queen/regular cuts $ (market price)
VEGETARIAN SELECTIONS
Wild Mushroom Stroganoff- Wide egg noodles tossed with a creamy wild mushroom ragout, topped with freshly shaved parmesan cheese.
Vegetable Wellington- An assortment of roasted fresh vegetables, smoked mozzarella and herbs, wrapped in puff pastry and served with a tomato-basil sauce.
Angels Pasta- Pasta tossed with tomatoes, roasted red peppers, spinach, basil, olive oil and roasted garlic and other herbs.
Pasta-less Lasagna- Sautéed vegetables, layered between "sheets" of portabello mushrooms and blended cheeses with a creamy garlic sauce. (seasonal )
Pasta Primavera- Pasta sautéed with garlic and fresh herbs, tossed with a medley of fresh vegetables, in a light cream or marinara sauce or garlic and oil.
All of the above come with salad and dinner rolls. (Fajitas excluded)
DESSERTS
Chocolate Oreo mousse...lt really speaks for itself.
Chocolate fondue with an array of delicious dipping items
